Happy Anniversary
Our 33rd anniversary was wonderful in our new home. We had wanted to have some elk steaks but they were nowhere to be found so we settled on a yak roast. I had made French onion soup...only to realize I didn't have any ovenproof bowls. I went to the second hand store and found a mix matched pair that worked out great. The yak cooked all day in red wine and broth and a few herbs and garlic. Turned out kind of like brisket.

Picked up the area rug. It looks good. We are making progress in spite of the fact that Jeff is just relaxing in the sun!

Cold Weather Walk
We took a walk along the road this morning. It was about 20 degrees. Dolores River is frozen.
Looks like just a small stream. It is hard to imagine that in a few months there will be rafters drinking beer going by.
This picture does not do justice to the beauty. The sun was shining on the snow. WOW!

Our First Real Stay
We have finally stayed in our new cabin. We have even had a few meals and several glasses of wine and local beer. We have been working hard getting things in order. Having a wonderful time.

Curried Sweet Potato and Chicken Soup
I adapted this recipe so it would have less white carbs. It is important being a diabetic that I limit my carbs. Turned out great.
1/2 pound sweet potatoes
1/2 diced onion
1 tbs minced garlic
2 tbs butter
2 tbs flour
1 tbs curry powder (the hotter the better)
1 tps garam masala
pinch red pepper flakes
1 large chicken breast cubed
2 cups chicken broth
1 cup whole milk
2 tps sugar
juice of 1/2 lime
plain yogurt
chopped cilantro
Sweat potatoes, onions ands garlic in butter in a large saucepan over medium heat. Cook until onion is soft, about 5 minutes.
Stir in flour, curry powder and garam masala; saute 30 seconds; stirring constantly; then add broth, milk and sugar. Bring soup to a boiul. reduce heat to medium low. cover and simmer, stirring often,add chicken until potatoes and chicken are tender.. about 15 minutes. Add garbonzo bean and simmer 5 minutes. Finish soup with lime juice, yogurt, cilantro and chutney and sheddreded coconut.

Cell Phone Craziness
OMG......My cell phone when nuts....posting photos to this blog. I was only trying to send my father in law a picture and it suddenly had a mind of its own. Thank goodness I didn't have anything questionable on there!
