Our First Real Stay

We have finally stayed in our new cabin. We have even had a few meals and several glasses of wine and local beer. We have been working hard getting things in order. Having a wonderful time.

Almost finished with another project. I wanted to make Roman shades for the Colorado house. I did find directions online. I ordered all my stuff and BAM. The first one took me awhile but the second was a snap. Now I just hope they fit the window. Pictures will come when they are hung.

Curried Sweet Potato and Chicken Soup

I adapted this recipe so it would have less white carbs. It is important being a diabetic that I limit my carbs. Turned out great.

1/2 pound sweet potatoes
1/2 diced onion
1 tbs minced garlic
2 tbs butter
2 tbs flour
1 tbs curry powder (the hotter the better)
1 tps garam masala
pinch red pepper flakes
1 large chicken breast cubed
2 cups chicken broth
1 cup whole milk
2 tps sugar
juice of 1/2 lime
plain yogurt
chopped cilantro

Sweat potatoes, onions ands garlic in butter in a large saucepan over medium heat. Cook until onion is soft, about 5 minutes.
Stir in flour, curry powder and garam masala; saute 30 seconds; stirring constantly; then add broth, milk and sugar. Bring soup to a boiul. reduce heat to medium low. cover and simmer, stirring often,add chicken until potatoes and chicken are tender.. about 15 minutes.  Add garbonzo bean and simmer 5 minutes. Finish soup with lime juice, yogurt, cilantro and chutney and sheddreded coconut.
